I have been in Chicago the past few days. My girlfriend had to take a test up there for a teaching program that she is more than likely going to enroll in to get her masters. Ultimately she will be there for several years and we both agree a long distance relationship isn't all that feasible. At the moment I can't really see myself moving and it feels really weird having a seemingly healthy relationship that has an expiration date on it... best enjoyed before mid June. While in Chicago we dined at a restaurant called Alinea. It was a world class experience. It was a prix fixe 25 course meal with highlights that include: hot potato cold potato black truffle soup that required a pin to be pulled to drop in an melt the cube of butter and Parmesan and be shot like a raw oyster, the most tender wagyu steak that was poached and accompanied by powdered steak sauce and a potato side that was ten times creamier than anything I've ever tried in my life all served with a dry ice aroma of freshly grilled food softly flowing out of a centerpiece vase, and a sweet potato bourbon and brown sugar concoction served at the bottom of a cinnamon stick that was burning like an insent and alongside a strip of bacon dressed with butterscotch, apple and thyme alongside a passion fruit, allspice and soy ice cream bite. Every dish had a gentle culinary genius about it. And the experience really went beyond pleasing the taste buds. They managed to simultaneously please the eye, olfactory, touch, and challenge your imagination. After the nearly five hour dining experience we asked our servers how many calories they thought we had just consumed, they laughed at our guess of 3-4k, went back and asked the chefs, and informed us of their estimate of ~10k calories.

hey joel. it's kevin. that restaurant and its food look *amazing* - a life highlight to be sure. it seems like this trip is a crossroads for you. i'm not sure i understand why you don't give Chicago a try. I won't write more here but don't hesitate to give me a call if you feel like.
